Cold foods should be kept at a temperature

Although we usually call it plain hummus, the meaning of hummus is actually «chickpeas». The full name of this Arabic puree of chickpeas and tahini (sesame paste) is hummus bi tahini. Finally, to get a really fine texture that we like at home, it is best to peel the chickpeas. To make the skin come off more easily, we can do several things: after soaking, protect them with a towel and give them a pass with a rolling pin; and during cooking, depressurize the pressure cooker «suddenly» several times to generate turbulence. As this is quite tedious, one option is to hydrate and cook the chickpeas with a pinch of bicarbonate. The alkaline medium helps to soften the cell walls, and although the texture that remains is not recommended when we are going to consume whole chickpeas, for a puree like this there is no problem, even better. Of course, both options -peeling and bicarbonate- make us lose healthy nutrients.
